jean-luc pasquet

The Pasquet Cognac vineyard has been family owned since 1730. Jean-Luc Pasquet and his wife, Marie-Françoise, had been growing fruit conventionally on their 7 hectare estate until 1995 when they began to explore organic winemaking. In 1998, they were granted “Agriculture Biologique” certification. JLP is now spear-headed by Jean-Luc’s son, Jean who has apprenticed under his father since childhood.

Jean-Luc does not chill-filter or add caramel or sugar to his cognac and only uses native yeast to start fermentation. He ferments his wine sur-lie and distils his cognac sur-lie. Their cognac epitomizes handmade, single vineyard cognac that expresses, uninterrupted and unadorned the majestic terroir of Grande Champagne.

l'organic 04 cognac 40.0% ABV

Wanting to showcase the beauty of a bright, younger cognac, L’Organic 04 is an alternative to the traditional VSOP. Rather than blending with various age statements, L’Organic 04 aims to exhibit the elegance and uniqueness of each stage of maturity. The 04 is a blend of two eau-de-vie aged 4 and 5 years, aged in Limosin oak barrels, 20% of which are new. It is dry and high in acidity, distilled twice sur lies in a Charentais pot still according to the traditional Cognac methods. Bottled on property, Pasquet’s cognacs are never chill filtered with no added sugar.

tasting notes

Pale gold with a pale straw hue. Vibrant, fresh aromas of dried flowers, ripe pear, ripe apricot and orange zest. A very soft palate entry builds to a full, round and rich mouth feel, delivering bright, fresh flavors of ripe stone fruits, dried figs, honey, cloves and cinnamon. Very gentle spirit warmth. Excellent balance. Long, drying aftertaste of dried fruits, cedar wood and cinnamon.

Dry white wine, high in acidity, distilled twice sur lies in a 20hl Charentais pot still according to the traditional methods of the region. The blend includes two, exclusively organic eau-de-vie aged 7 and 8 years in Limosin oak barrels, 30% of which are new. Bottled on the property, Pasquet cognac is never chill filtered and consequently no sugars are added.

tasting notes

This cognac exhibits a bright gold color with a pale gold hue. Moderate aromas reveal scents of ripe apricot, dried fig, cedar-wood & vanilla with a trace of dark chocolate lingering beneath. Very fresh and clean. A silky, soft palate entry delivers a supple, luscious mouth feel offering semi sweet flavors of stewed apricot, vanilla and spice. Pure, smooth, gently warming spirit. Excellent balance. Finishes dry with a long, subtle cedary oak, dried fig and creme brulée fade.

Dry white wine, high in acidity, distilled twice sur lies in a Charentais pot still according to the traditional methods of the region. The blend includes two, exclusively organic eau-de-vie aged 10 and 12 years in Limousin oak barrels, 35% of which are new. Bottled on the property, Pasquet cognac is never chill filtered and consequently no sugars are added.

tasting notes

Generous aroma offers up attractive scents of fig, cinnamon and vanilla. Second pass finds raisins, hints of cedar and dried flowers. The bouquet follows through to an elegant, middle weighted profile of dried fig with hints of nougat carried by a pantry of sweet spices through to the clean, drying aftertaste. A Lovely cognac in the lighter, drier and balanced style.

pineau des charentes 18.0% ABV

Pineau de Charentes is a delicious aperitif composed of cognac blended with grape juice. Legend has it that it was first created by accident, after a winemaker had added grape juice to a barrel that he believed was empty. When he went to check on the barrel, he had discovered that the juice had been combined with eau-de-vie, but was delighted by his mistake. He then proudly commercialized the spirit soon afterwards.
Jean-Luc Pasquet’s Pineau de Charentes is made with freshly pressed grape juice as the grapes must be extremely ripe in order obtain the richest, natural sugars. Once blended with eau-de-vie, it is then aged for a minimum of 24 months. Production is strictly controlled to ensure the highest quality through proper blending and aging.

tasting notes

White-gold in color, the nose of this Pineau is lively and complex, with aromas of dried fruit; notes of pear- flambée and honey persist. It is wonderfully balanced on the palate as pear and honey flavors blossom from the start. The finish shines with invigorating, complex tannins and hints of candied grapefruit.

marie framboise 16.0% ABV

Marie Framboise is a blend of freshly pressed grape juice and eau de vie that has had fresh, organic red raspberries macerated in it for three months. Made very much in the style of the Pineau des Charentes the beautifully balanced Marie Framboise is the very essence of raspberry flavor with notes of grapes and cognac all beautifully harmonized.

Dazzling ruby-red in color with a wonderfully complex nose of raspberries and grapes, Marie-Framboise is a spirited, refreshing experience on the palate. The attack is structured and flamboyant, combining natural sugars, organic berries and alcohol. The alcohol is integrated beautifully and tamed by the natural sugar of the fruit.
